Baked Ham with Honey-Chipotle Glaze

For the Ham:

  • 1 bone-in spiral-sliced ham (810 lbs)
  • Whole cloves (optional, for studding the ham)

For the Honey-Chipotle Glaze:

  • 1/2 cup honey
  • 1/4 cup brown sugar (packed)
  • 1/4 cup Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons orange juice
  • 12 chipotle peppers in adobo sauce (finely chopped, adjust to desired spice level)
  • 1 tablespoon adobo sauce (from the chipotle pepper can)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cloves
  • Salt and pepper, to taste

Instructions

1. Prepare the Ham:

  • Preheat your oven to 325°F (165°C).
  • Place the ham on a rack in a large roasting pan. If your ham has a thick layer of fat, score it in a diamond pattern to allow the glaze to penetrate.
  • (Optional) For added flavor, you can stud the ham with whole cloves in the center of each diamond.

2. Make the Honey-Chipotle Glaze:

  • In a small saucepan, combine the honey, brown sugar, Dijon mustard, apple cider vinegar, orange juice, chopped chipotle peppers, adobo sauce, cinnamon, smoked paprika, and ground cloves.
  • Bring the mixture to a simmer over medium heat, stirring occasionally. Let it cook for about 5-7 minutes, or until it thickens slightly and becomes syrupy. Taste and adjust seasoning with salt and pepper as needed. If you want more heat, add an extra chipotle pepper or a bit more adobo sauce.
  • Remove from heat and set aside.

3. Bake the Ham:

  • Brush about 1/3 of the honey-chipotle glaze over the ham, ensuring the surface is well-coated.
  • Tent the ham loosely with foil and bake for about 1.5-2 hours (depending on the size of your ham), basting every 30 minutes with the glaze. Keep the ham covered with foil to help retain moisture.
  • During the last 30 minutes of baking, remove the foil to allow the glaze to caramelize and the ham to get a nice, crispy finish.

4. Serve:

  • Once the ham reaches an internal temperature of 140°F (60°C), remove it from the oven.
  • Let it rest for 10-15 minutes before slicing. This allows the juices to redistribute and ensures a moist, flavorful ham.
  • Serve the ham with extra glaze on the side for drizzling.
