Buffalo Meatball Pumpkins Appetizer

Ingredients

  • 1 pound ground chicken (or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup buffalo sauce (plus extra for serving)
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 cup green onions (chopped, for garnish)
  • 1/2 cup shredded cheddar cheese (for “pumpkin tops”)
  • Mini pretzel sticks (for stems)

Instructions

  • Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Prepare the Meatball Mixture: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, buffalo sauce, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Form the Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on the prepared baking sheet.
  • Bake the Meatballs: Bake in the preheated oven for about 20-25 minutes, or until the meatballs are cooked through and golden brown.
  • Add the Cheese: Remove the meatballs from the oven and sprinkle shredded cheddar cheese on top of each one. Return to the oven for an additional 3-5 minutes, or until the cheese is melted.
  • Garnish: Once the meatballs are out of the oven, place a mini pretzel stick in the top of each meatball to resemble a pumpkin stem. Optionally, sprinkle with chopped green onions for added color and flavor.
  • Serve: Arrange the Buffalo Meatball Pumpkins on a platter and serve with extra buffalo sauce on the side for dipping.
