- 1 pound ground chicken (or turkey)
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup buffalo sauce (plus extra for serving)
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup green onions (chopped, for garnish)
- 1/2 cup shredded cheddar cheese (for “pumpkin tops”)
- Mini pretzel sticks (for stems)
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Prepare the Meatball Mixture: In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, buffalo sauce, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Form the Meatballs: Using your hands, form the mixture into small meatballs, about 1 inch in diameter. Place them on the prepared baking sheet.
- Bake the Meatballs: Bake in the preheated oven for about 20-25 minutes, or until the meatballs are cooked through and golden brown.
- Add the Cheese: Remove the meatballs from the oven and sprinkle shredded cheddar cheese on top of each one. Return to the oven for an additional 3-5 minutes, or until the cheese is melted.
- Garnish: Once the meatballs are out of the oven, place a mini pretzel stick in the top of each meatball to resemble a pumpkin stem. Optionally, sprinkle with chopped green onions for added color and flavor.
- Serve: Arrange the Buffalo Meatball Pumpkins on a platter and serve with extra buffalo sauce on the side for dipping.
