  • 1/2 cup heavy cream (optional): If you prefer a creamier soup, you can add heavy cream to make it rich and velvety.

Instructions

STEP 1: SAUTÉ THE VEGETABLES AND GARLIC

In a large pot or Dutch oven, heat the olive oil over medium heat. Once the oil is hot, add the diced onion and diced carrot. Sauté the vegetables for about 5 minutes, or until they start to soften and the onion becomes translucent. This will create the flavorful base for the soup.

Add the minced garlic to the pot and sauté for another 1 minute, stirring constantly to prevent the garlic from burning. You want to release the full flavor of the garlic, so make sure it gets fragrant and golden, but not too browned.

STEP 2: ADD THE BROTH AND SEASONINGS

Once the garlic is fragrant, pour in the chicken broth and water. Stir to combine, making sure to scrape up any bits from the bottom of the pot, which will add even more flavor to the broth.

Add the dried thyme, dried oregano, salt, and black pepper. Stir everything together, and bring the mixture to a simmer. Let it cook for about 5-10 minutes so that the flavors can meld and the broth becomes rich and aromatic.

STEP 3: COOK THE TORTELLINI

Once the broth is simmering and the vegetables are tender, add the tortellini to the pot. Stir to combine and let the tortellini cook for about 5-7 minutes, or until the pasta is tender and has floated to the top. Keep an eye on it, as fresh tortellini cooks quickly.

If you prefer a creamier soup, you can add the heavy cream at this stage. Stir well to incorporate the cream, which will make the soup rich and velvety. You can also add the fresh spinach at this point, stirring until it wilts and softens.

STEP 4: TASTE AND ADJUST SEASONINGS

Once the tortellini is cooked through and the spinach is wilted (if using), taste the soup and adjust the seasoning as necessary. You may want to add more salt, pepper, or even a bit of garlic powder or crushed red pepper flakes if you prefer a little heat.

If the soup is too thick, you can add a bit more water or broth to reach your desired consistency.

STEP 5: SERVE AND ENJOY!

Ladle the soup into bowls and garnish with a sprinkle of grated Parmesan cheese and freshly chopped parsley, if desired. Serve the soup hot, with a side of crusty bread or crackers to soak up all the delicious broth.
