Ingredients

  • 12 oz pasta (fusilli or rotini work well)
  • 1 cup cherry tomatoes, halved
  • 1 cup black olives, sliced
  • 1 cup bell peppers (orange, yellow, and green), diced
  • 1/2 cup red onion, finely chopped
  • 1 cup shredded mozzarella cheese
  • 1/2 cup Italian dressing (store-bought or homemade)
  • 1/4 cup fresh basil, chopped
  • Optional: candy eyeballs or edible spiders for decoration

Instructions

  • Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  • Prepare the Vegetables: While the pasta cooks, chop the cherry tomatoes, olives, bell peppers, and red onion.
  • Combine Ingredients: In a large mixing bowl, combine the cooked pasta, tomatoes, olives, bell peppers, red onion, and mozzarella cheese.
  • Dress the Salad: Pour the Italian dressing over the pasta mixture and toss until everything is well coated.
  • Add Fresh Herbs: Gently fold in the chopped basil.
  • Chill: Cover the salad and refrigerate for at least 30 minutes to let the flavors meld.
  • Decorate: Before serving, add candy eyeballs or edible spiders on top for a spooky touch.
