For the Jalapeño Topping:

  • 4 fresh jalapeños (or more, depending on how spicy you like it)
  • 4 slices bacon (crispy, crumbled bacon adds crunch and flavor)
  • ½ cup breadcrumbs (for a crunchy topping)
  • 1 tablespoon melted butter (to toss with breadcrumbs)
  • Fresh cilantro or parsley (optional, for garnish)

Instructions

Step 1: Cook the Pasta

Start by cooking your pasta according to the package instructions. Be sure to salt the water generously to season the pasta as it cooks. Drain the pasta and set it aside. For best results, don’t overcook the pasta; it should be al dente, as it will continue to cook in the sauce.

Step 2: Prepare the Bacon and Jalapeños

While the pasta is cooking, cook the bacon in a large skillet over medium heat until it’s crispy, about 5-7 minutes. Once the bacon is crispy, remove it from the pan, crumble it into small pieces, and set it aside.

In the same skillet, roast the jalapeños. Place the whole jalapeños in the pan and cook them over medium-high heat, turning occasionally until the skin is charred and blistered, about 8-10 minutes. Once they’re charred, remove them from the skillet, slice off the stems, and carefully remove the seeds (unless you want more heat). Dice the jalapeños into small pieces and set aside.

Step 3: Make the Cheese Sauce

In a large pot or Dutch oven, melt 2 tablespoons of butter over medium heat. Add the flour and whisk constantly to create a smooth roux. Let it cook for 1-2 minutes to remove the raw flour taste.

Slowly pour in the milk and heavy cream, whisking continuously to ensure there are no lumps. Continue to cook, whisking frequently, until the sauce thickens, about 5-7 minutes.

Once the sauce has thickened, stir in the cream cheese, cheddar cheese, and Monterey Jack cheese. Keep stirring until the cheese is fully melted and the sauce is creamy. Add the garlic powder, onion powder, mustard powder, and season with salt and pepper to taste. Taste the sauce and adjust the seasoning if needed.

Step 4: Combine the Pasta and Sauce

Add the cooked pasta to the cheese sauce, stirring gently to coat all the noodles in that creamy, cheesy goodness. Once the pasta is evenly coated, stir in the roasted jalapeños and crispy bacon, making sure everything is well mixed.

Step 5: Prepare the Topping

In a small bowl, combine the breadcrumbs with the melted butter, stirring to coat the breadcrumbs. Set aside.

Step 6: Assemble and Bake

Preheat your oven to 375°F (190°C). Transfer the mac and cheese mixture to a large baking dish, spreading it out evenly. Sprinkle the breadcrumb mixture over the top of the mac and cheese, pressing down gently to ensure it sticks.
