Mini Monster Meatloaf

Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup ketchup (plus more for topping)
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Black olives (for “eyes”)
  • Green bell pepper (sliced, for “mouth”)
  • Optional: cooked bacon bits (for decoration)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix the Ingredients: In a large bowl, combine the ground meat, breadcrumbs, milk, ketchup, egg, Worcestershire sauce, garlic powder, onion powder, salt, and pepper. Mix until just combined.
  • Shape the Meatloafs: Divide the mixture into 6-8 portions and shape each into a mini loaf, placing them on the prepared baking sheet.
  • Add Cheese: Press shredded cheese into the top of each meatloaf for a gooey, delicious topping.
  • Top with Ketchup: Squeeze a little extra ketchup on top of each mini loaf for added flavor.
  • Bake: Bake in the preheated oven for 25-30 minutes, or until the internal temperature reaches 160°F (70°C).
  • Decorate: Once out of the oven, use sliced olives for eyes and pieces of bell pepper for mouths. If you’d like, sprinkle with bacon bits for extra flavor.
  • Serve: Enjoy these monster meatloafs warm and watch them disappear!
